As detailed in the comic book miniseries Jango Fett — Open Seasons, the wars began after Jango Fett’s adoptive father, Jaster Mereel, became Mand’alor, leader of the Mandalorian clans.

Jango Fett remained the Mand'alor after killing Vizsla, but became a bounty hunter who traveled the galaxy in Jaster Mereel’s old troop transport, which Jango named Jaster’s Legacy.

So Jango Fett wasn't a Mandalorian in the same way the Bo Katan is, that much is now clear, but he was still raised among their ways. That's not to say Jango Fett was a Child of the Watch, however.
