The company’s CEO, John Plew, told the Business Journal that as the Thirsty Lion has been growing its brand in Arizona and beyond, the current restaurant prototype is around 6,000 square feet.

Thirsty Lion will open at 5754 Grandscape Blvd. Suite 205, The Colony, in March 2022, and at 7859 Walnut Hill Lane, Suite 140, Dallas, in May 2022.

Thirsty Lion Gastropub has been expanding since its launch in 2010 with 10 locations in Arizona, Colorado, Oregon and Texas. The restaurant is also hiring for all positions.

Across its 11 locations and counting, Thirsty Lion spaces fall into two size categories. Single-level models are roughly 6,500 to 7,500 square feet, with a 1,000 square foot patio.

Gastropub and grill chain Thirsty Lion recently opened its largest Valley location, according to a company news release sent on Dec. 10, 2024.
