ST. LOUIS PARK, Minn. — Chi-Chi's, the once-beloved restaurant chain that disappeared from the dining scene two decades ago, announced its first Minnesota location on Tuesday. Michael McDermott, son of the chain’s original cofounder, said he plans to convert his Rojo restaurant in St. Louis Park into a Chi-Chi's, according to a news release.
